Serves 4

Ready in 20 (canned) 1hr (fresh veg)


If you don’t have the time for all the chopping and extra cook time you can substitute canned vegetables use sundried or fire roasted diced tomatoes to add an extra kick of flavor.

Step 1

In a large pan over medium heat add the coconut oil, potatoes, 1 chopped onion, carrots, and half of the diced garlic. Cover with a lid.

Step 2

In a separate pan brown your ground meat with mushrooms, the other chopped onion, and rest of the garlic. Spice with cracked peppercorn.

Step 3

Dice your avocados, tomatoes, bell pepper, and spice with cumin and sea salt.

Step 4

Using a stainless steel colander drain the fat out of the meat and add it to the vegetables.

Step 5

Let simmer for 2-3 min use a fork to see if carrots and potatoes are cooked fully and enjoy

This meal is delicious and can be ready in 20 min using canned vegetables, but nothing beats using fresh vegetables when you have the time.
