Ready in 30-40 min

Whether you have leftover mashed potatoes or not, this dish is still easy and quick. I added ingredients for gravy in this recipe, I just follow the directions on the corn starch container.

You may need to experiment with how much pancake mix you add to make these potato pancakes thicker and firmer so that you can pick them up and enjoy the way a burger was intended to be!

Step 1

Prepare mashed potatoes. If you don’t have leftovers wash a couple of potatoes and pierce with a fork. Add a small amount of water to a bowl(about 1/4 cup) microwave on high for 6-8 min turning over halfway through cooking.

Step 2

Add potatoes to the mixer bowl with oil, pancake mix, eggs, and slowly add rice milk with the mixer on med until you have a consistency a little thicker than pancake batter.

Step 3

Start your burgers! Med heat with minced onion and pepper. Flip in 3 min intervals. If you’re having mushrooms add them to the pan with your burger.

Step 4

Fry your potato pancakes same as you would regular pancakes. I noticed that I need to keep my burner on a lower temp than when I am making pancakes or they burn.

Step 5

Build your burger using the potato pancakes as a bun and cover with gravy.


If I’m being honest I started this post before I actually made this burger! I had the idea one night and started writing things down to make it. I told my oldest daughter about my idea and she was more than eager to be my test subject! (with a full mouth of burger and very wide-eyed)
